Pad thai with potato

Ingredients
- 200g pan noodles or potato rice
- 200g giant prawns
- 2 spring onions
- 100g beansprouts
- zest and juice of 1 lime
- 2 tbsp dark brown sugar
- 3 tbsp fish sauce
- 1 tbsp ginger paste
- 1 tbsp garlic paste
- 1 tbsp sesame oil
- 4 tbsp ground peanuts
- Oil, salt Coriander to garnish
Recipe
Sauté the giant prawns in oil and add the ginger, garlic and fish sauce. Add the pre-boiled pan noodles/ potato rice and beansprouts. Add the sesame oil and begin to fry the ingredients in a wok. Finally, add in the chopped spring onions and half of the ground peanuts. Serve and garnish with the rest of the ground peanuts.
