Salmon and potato pie

Ingredients

  • 1 bag Rooty Potato Rice
  • 1 packet of gluten-free pie dough
  • 150 g warm-smoked salmon
  • 1 bunch dill
  • 1 lemon
  • 2 dl whipping cream
  • 1 tub creme fraiche
  • 4 eggs
  • salt
  • pepper
  • butter
  • gluten-free flour

Recipe

Heat the oven to 175 degrees Celsius. Grease a pie dish with butter and flour. Press the pie dough evenly into the base and sides of the pie dish, and prick it with a fork. Pre-bake the crust for 15 minutes on the middle shelf of the oven. Defrost the potato rice under running water in a sieve, if necessary, and press dry. Mix together the potato rice, shredded salmon, finely chopped dill, the whipping cream, crème fraîche, and eggs. Season with 2 tsp salt, ½ tsp pepper, and grated zest and juice of the lemon. Spread the mixture onto the partly baked crust and continue baking for another 30-35 minutes. Let cool for a while and enjoy!
