Tortilla Española with Wok potatoes
Ingredients
- 1 dl Rooty Wok Potatoes
- 0,5 yellow onion, sliced
- extra virgin olive oil
- salt
- 3-5 eggs
Salad:
- handful of mixed salad
- 1 tbsp extra virgin olive oil
- dash lemon juice
- salt
Recipe
Heat the oven to 170 degrees Celsius. Heat a coated frying pan over medium heat and add a splash of olive oil. Fry the onions for around 5 minutes, or until softened, stirring occasionally.
Then add the Wok potatoes until it has thawed completely. If you wish, you can also fry it a little more until it takes on a golden brown color.
Break the structure of the eggs in a bowl and season with salt. Once the potates has thawed, add the eggs and stir through to distribute the ingredients evenly. Place the omelette in the oven for around 10 minutes or until it sets.
Once the omelette is ready, remove it from the pan and turn it out onto a plate. Mix together the salad ingredients, place the omelette on top and serve immediately.
