Fried wok potatoes

Ingredients
- 2 dl Rooty Wok potatoes
- dash sesame oil
- 1 carrot, cubed
- 1 pak choi, chopped
- 1 bell pepper, chopped
- 1 garlic clove
- 1 piece of ginger, approx. 4 cm
- 2-3 tbsp soy
- handful of frozen peas 1 egg
To garnish:
- 1 red chili, chopped
- coriander
Recipe
Heat a frying pan over high heat and add a splash of sesame oil. Fry the carrots over high heat until they darken slightly. Then add the pak choi and bell pepper and continue to cook for a couple of minutes.
Once the vegetables have charred slightly, grate in the garlic and ginger. Then add wok potatoes and let it thaw.
Once wok potatoes has thawed, add in the soy and the peas and mix well.
Finally, add in the egg and stir thoroughly. Let the egg cook completely before serving.
Garnish the dish with sliced chili and coriander!
