Ingredients

  • 400 g Rooty Wok potatoes
  • 150 g chorizo sausage
  • 100 g button mushrooms
  • 80 g whole green beans
  • 50 g butter
  • ½ bunch spring onions
  • 1 green jalapeno
  • 1 tbsp apple cider vinegar
  • 1 tbsp coarse Dijon mustard
  • 1 tsp salt
  • ½ tsp black pepper from a mill
  • 4 eggs

Recipe

Use a knife to thinly slice the chorizo sausage and jalapeno. Chop the mushrooms and green beans. Finely chop the spring onions.

Heat a saucepan and add the chorizo. Brown the sides of the sausage and add the mushrooms and beans. Fry for about 3 minutes. Measure the butter and Dijon mustard into the pan. Reduce the heat slightly and pour in the frozen Rooty wok potatoes, then fry for about 5 minutes. Season with salt, black pepper, and apple cider vinegar.

Move the pyttipannu to a serving dish and then fry the eggs for each serving using the same pan.

Garnish with fresh herbs and enjoy.
