One Pot Sausage Hash using Rooty Wok Potatoes

Ingredients

  • 1 bag (450 g) Rooty Wok potatoes
  • 1 packet of chorizo sausage, e.g. Snellmann or some other sausage
  • 1 small onion
  • 2 medium-sized tomatoes
  • 2 dl water
  • half a beef stock cube or 1 tsp beef stock concentrate
  • ½ dl flat-leaf parsley or other fresh herbs
  • 1 tsp salt
  • black pepper

Recipe

  1. Cut the sausage into pieces. If the sausage has a thick casing, remove it.
  2. Chop the onion and the tomatoes.
  3. Place the sausage pieces in a cold pan and turn on the stove. Fry until the fat starts to come out of the sausages and they start to brown. Add the chopped onion and fry until the onion becomes translucent.
  4. Add the tomatoes and Rooty Wok potatoes to the pan. Stir.
  5. Add water and crumble half a beef stock cube into the mixture. Let it cook for 5 minutes on low heat.
  6. Add some fresh herbs and season with salt and black pepper.
